Announcing Two (2) New Raw Cheese Flavors
Raw Cheddar With Added Rosemary & Charcoal
Prepare your taste buds! (The picture above is simply a mock image, so it doesn’t show you the very cool, artistic “marbling-patterns” that the charcoal creates). Activated charcoal is one of the most primitive, primal food ingredients found in nature. The known health benefits of charcoal go back to the beginning of our understanding of nutrition in the gut; but besides the health benefit, charcoal creates a unique marbling effect throughout the cheddar cheese that will make all the foodies go wild! When you cut into this raw, artisan product you will find pockets of flavor nestled with the creaminess of the whole raw milk cheddar and Rosemary. The charcoal helps showcase the cheddar’s natural intricate marbling.
Where did we get this flavor combination idea? The answer may surprise you. We were inspired by New York’s trending cocktail bar scene! One of my favorite mental escapes I do each month is read the Food & Wine magazine on my back porch (overlooking our organic farm in Fresno, CA). This month’s issue read that the New York City “hottest new cocktail trend” is mixing Charcoal and Rosemary with Gin, Vodka, or Whiskey… (LIGHT BULB MOMENT)
What would our raw cheddar taste like with these two flavors added? I had a napkin of notes with a running list of 19 different flavors jotted down. Some of these flavors were more common and some were pretty unique. None were THIS unique. The “wild card” flavor of charcoal and rosemary ended up making our 20th and final spot for our upcoming New Product R&D Trial. A few days later our family met in our farm kitchen to taste-test over 20 different new possible raw cheese flavors. Wow (oh … wow!) Rosemary and Charcoal impressed us all! It was a hands-down, “Yes, yes, YES!” The rosemary flavor complemented the charcoal perfectly. Who would have known that our little organic farm would have adopted with one of the largest metropolitan cities to create such an exciting new product?

Raw Cheddar With Added Jalapeño
Not too spicy, but JUST RIGHT. Our farm is located in the heart of the Central Valley (30 minutes outside of Fresno, CA). Our heritage may come from Scotland and England, but our family’s taste buds love the spice of jalapeños and local, California cuisine. In the Central Valley, we have a beautiful melting pot from all over the world. Spice comes second nature to our pallets. When we started spreading the world and asking our customers (years ago) what they wanted from OP as a new cheese flavor it became very clear to us that a jalapeño flavor would be very popular. This was an easy choice for us!
Back in April, we attended the Paleo F(x) Event in Austin, TX. We asked local Texans what kind of new cheese flavor they wanted and they repeatedly said, “Oh, what about… Jalapeño?” Seems like Californians and Texans love Jalapeños, but that just seems too obvious. How about our other states? Over the past few months, I have been polling our Instagram followers about new cheddar cheese flavors that they would love to taste! We even partnered with one of our popular food bloggers from the Boston, MA to see what the North/East part of the US wanted. Well, turns out that EVERY REGION loves Jalapeños… (good time to be an organic Jalapeño farmer).
How would it taste? When we started our New Product R&D Trial we had jalapeño at the very top of the list. Not surprisingly so, but when we tasted the combination of the creamy whole raw milk cheddar cheese and the heat from the jalapeño it was the perfect pairing. The next step would be in the details of HOW MUCH jalapeño would make for the perfect recipe.
Sampling the different spice ratios was a hoot (picture this):
TOO HOT- (Tears flowing)… “AAaa, that is too spicy. Pass the raw milk! My tongue is on fire!
TOO MILD- (Hum?) That needs more of a kick, too mild.
The batches with too much or too little heat may not have made the cut, but it was surely entertaining to watch the tears of laughter from our tasting group decide. The winning recipe is JUST RIGHT. Even our nine (9) year old taste tester, James, helped choose the winning recipe and gave it his thumbs up for the younger customers, too. We are not sure how, but it is spicy enough for all ages.
How funny is it that the first (#1) and last new (#20) of the new potential product flavors made the TOP 2 NEW FLAVOR SPOTS?
